CHICKEN MAYO SALAD
Ingredients
2 boneless chicken breasts
2 tablespoons mayonnaise
2-3 bay leaves
5-7 black peppercorns
1-2 spring onions with greens, finely chopped + for garnishing
½ medium onion, finely chopped
½ medium red bell pepper, finely chopped
½ medium green capsicum, finely chopped
¼ cup boiled corn kernels
3 tablespoons yogurt, strained
Crushed peppercorns to taste
Salt to taste
8 French bread slices
Method
1. To poach chicken, heat sufficient water in a non-stick pan. Add chicken, bay leaves and peppercorns and cook on medium-high heat for 14-15 minutes. Strain the excess water.
2. Roughly tear poached chicken and place in a bowl. Add spring onions with greens, onion, bell pepper, capsicum and corn kernels and mix well. Add mayonnaise and yogurt and mix well. Add crushed peppercorns and salt and mix well.
3. Put some chicken mayo salad over French bread slices. Serve garnished with spring onions with greens.
Preparation time: 8-10 minutes
Cooking Time: 14-15 minutes
